Ingredients

  • 2 1/4 cups plain flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 eggs
  • 2 1/2 tablespoons liquid sweetener
  • 1 cup cooked pumpkin
  • 1 (8 oz) can crushed pineapple with juice
  • 1/3 cup Grape-Nuts cereal

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a Bundt pan or two small loaf pans with cooking spray.
  2. Sift together the flour, sugar, cinnamon, salt, baking soda, and baking powder in a large bowl.
  3. In a separate large mixing bowl, add the beaten eggs, liquid sweetener, cooked pumpkin, crushed pineapple with juice.
  4. Mix well until combined.
  5. Add half of the dry ingredients to the wet ingredients and mix well.
  6. Gradually add the remaining dry ingredients and mix until just combined.
  7. Fold in the Grape-Nuts cereal.
  8. Pour the batter into the prepared pan(s).
  9. Bake for 1 hour or until a tester inserted in the center comes out clean.
