- Preheat the oven to 350°F (175°C). Spray a Bundt pan or two small loaf pans with cooking spray.
- Sift together the flour, sugar, cinnamon, salt, baking soda, and baking powder in a large bowl.
- In a separate large mixing bowl, add the beaten eggs, liquid sweetener, cooked pumpkin, crushed pineapple with juice.
- Mix well until combined.
- Add half of the dry ingredients to the wet ingredients and mix well.
- Gradually add the remaining dry ingredients and mix until just combined.
- Fold in the Grape-Nuts cereal.
- Pour the batter into the prepared pan(s).
- Bake for 1 hour or until a tester inserted in the center comes out clean.
