Ingredients

  • 12 manicotti shells, cooked and drained
  • 1 package frozen chopped spinach, cooked and drained
  • 1 tablespoon chopped onions
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons chopped parsley
  • 1 cup low-fat cottage cheese, drained
  • 2 tablespoons skim milk
  • 1 egg white, beaten
  • 2 cups tomato sauce
  • 1/4 cup tomato paste
  • 1/2 cup chopped red bell pepper
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon dried basil

Instructions

  1. Mix cooked and drained chopped spinach with chopped onions, ground nutmeg, and chopped parsley.
  2. Mash low-fat cottage cheese and blend with skim milk.
  3. Add the cottage cheese mixture to the spinach mixture.
  4. Mix in the beaten egg white.
  5. Stuff each cooked and drained manicotti shell with the cheese and spinach mixture.
  6. Combine tomato sauce, tomato paste, chopped red bell pepper, dried oregano, and dried basil.
  7. Pour some of the tomato sauce mixture into a baking dish, place stuffed shells on top, and cover with remaining sauce.
  8. Sprinkle grated Parmesan cheese over the top.
  9. Bake in a preheated oven at 375°F (190°C) for about 30 minutes until heated through and bubbly.
