Lucy’s Hermit Cake is a rich, moist traditional fruitcake with dates, nuts, and warm spices, perfect for holidays or special occasions and suitable for those who love hearty, flavorful desserts.

Ingredients

  • 6 eggs
  • 1 lb. butter or oleo
  • 3 cups flour
  • 2 lb. dates
  • 1 lb. nuts
  • 2 tsp. vanilla
  • 2 tsp. baking powder
  • juice of 1 lemon
  • 1 lb. brown sugar

Instructions

  1. Cream together the sugar and butter.
  2. Add eggs one at a time, beating after each addition.
  3. Mix in lemon juice and vanilla.
  4. Coat dates and nuts with a little of the flour.
  5. Add baking powder and cinnamon to the remaining flour.
  6. Add the prepared flour mixture to the egg mixture.
  7. Fold in the floured nuts and dates.
  8. Line a tube pan with wax paper and grease and flour it.
  9. Place a pan of water in the bottom of the oven.
  10. Bake at 200°F (93°C) for 3 hours or until done.
  11. Store in a tight container.
  12. Allow 2 to 3 weeks for the flavors to mellow.
  13. Optional: add apple slices or a sprinkle of wine to enhance flavor.
