A creamy, cheesy asparagus topping served over toasted English muffins with crispy bacon, perfect for brunch or a special luncheon gathering.

Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 c. milk
  • 1 c. grated Cheddar cheese (mild)
  • 1 small onion, grated
  • 1 (3 oz.) can mushrooms, drained
  • 1 (14 oz.) can asparagus spears, drained or fresh cooked asparagus
  • 4 toasted English muffins
  • 8 pieces crisp bacon
  • 1/4 c. sherry (optional)

Instructions

  1. Melt butter in a saucepan; add flour and cook for several minutes, stirring constantly.
  2. Gradually add milk, stirring until the sauce thickens; add cheese and stir until melted. Season with salt and pepper to taste.
  3. Add grated onion and drained mushrooms to the sauce and cook briefly.
  4. Place cooked or drained asparagus on toasted English muffins.
  5. Pour the cheese sauce over the asparagus on the muffins.
  6. Sprinkle with crisp bacon pieces on top.
  7. Optional: Add sherry to the sauce before serving.
