Ingredients

  • 1 3/4 cups white sugar
  • 1 cup salad oil
  • 3 eggs
  • 2 cups pumpkin
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cloves
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Instructions

  1. Beat the liquid ingredients together: sugar, salad oil, and eggs.
  2. Add the pumpkin to the mixture and mix well.
  3. In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda, cloves, ginger, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Optional: fold in chopped nuts, chopped dates, or raisins if desired.
  6. Pour the batter into a greased loaf pan or divide among three smaller loaf pans.
  7. Bake at 325°F (160°C) for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the pan and serving.
