Ingredients

  • 2 medium carrots, sliced thin
  • 1 medium zucchini
  • 1 tsp. margarine
  • 1 (8 oz.) can stewed tomatoes (undrained)
  • 2 1/2 oz. sliced mushrooms
  • 1 c. water
  • 1/4 tsp. basil
  • 1/4 tsp. thyme
  • 16 oz. kielbasa, cut into pieces

Instructions

  1. Sauté carrots and zucchini in margarine in a 10-inch skillet over medium heat for 3 minutes.
  2. Add stewed tomatoes and juice, sliced mushrooms, water, basil, thyme, and kielbasa to the skillet.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 5 minutes.
  4. Stir in the uncooked instant rice, cover, remove from heat, and let stand for 8 minutes, stirring after 4 minutes.
  5. Season with hot sauce to taste before serving.
