Ingredients

  • 1 can peas
  • 1 can string beans
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1 cup chopped celery
  • 2 oz pimento
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 tsp salt
  • 1 1/2 tsp celery seed
  • 1/2 tsp white mustard seed

Instructions

  1. Drain the canned peas and string beans.
  2. Combine peas, string beans, chopped bell pepper, chopped onion, chopped celery, and pimento in a large bowl.
  3. In a separate small bowl, whisk together vinegar, sugar, salt, celery seed, and white mustard seed until sugar and salt are dissolved.
  4. Pour the dressing over the vegetable mixture and toss to coat evenly.
  5. Cover and chill in the refrigerator overnight.
  6. Before serving, drain any excess liquid if necessary and serve cold.
