Ingredients

  • 6 c. bread flour
  • 1 tsp. baking soda
  • 1 Tbsp. baking powder
  • 1 Tbsp. salt
  • 4 Tbsp. sugar
  • 1 c. liquid shortening
  • 3 c. buttermilk
  • 2 pkg. yeast
  • 4 Tbsp. warm water

Instructions

  1. If using cottage cheese, put the 1 cup of buttermilk in a blender, then add the cottage cheese and blend until smooth.
  2. In a large mixing bowl, combine bread flour, soda, baking powder, salt, and sugar.
  3. Add the liquid shortening and buttermilk mixture to the dry ingredients, stirring until well combined.
  4. Dissolve the yeast in the warm water and let it activate for about 5 minutes, until foamy.
  5. Add the activated yeast to the dough mixture and knead until smooth and elastic, about 8-10 minutes.
  6. Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Punch down the risen dough and divide into 12 equal portions.
  9. Shape each portion into a roll and place on a greased baking sheet.
  10. Bake in the preheated oven for 12-15 minutes, until golden brown.
  11. Remove from oven and let cool slightly before serving.
