Ingredients

  • 1 lb. split green peas
  • 1/2 to 2 cups diced celery
  • 1/2 to 1 cup diced onion
  • 1/2 to 1 cup diced carrots
  • 1 bay leaf
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 5 cups water or ham broth
  • 4 cups canned mixed vegetable juice
  • 2 ham hocks

Instructions

  1. Simmer ham hocks for 2 hours and let stand.
  2. Remove hocks from broth.
  3. Let the broth cool slightly.
  4. Remove fat from the broth and meat from the bones.
  5. Use the prepared ham and broth as a base for the soup.
