Ingredients

  • 1 cup oil
  • 2 cups sugar
  • 4 large eggs
  • 2 jars junior carrots
  • 1 cup chopped nuts
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Cream together oil, sugar, and eggs in a mixing bowl.
  2. Add the dry ingredients: flour, baking soda, cinnamon, and salt; mix well.
  3. Stir in the junior carrots and chopped nuts until evenly combined.
  4. Grease and flour a 13 x 9-inch baking pan.
  5. Pour the batter into the prepared pan.
  6. Bake at 300°F (150°C) for about 1 hour or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before serving.
