A hearty, layered Mexican casserole featuring seasoned ground meat, cheese, beans, and tomatoes, perfect for family dinners or gatherings with bold flavors and comforting textures.

Ingredients

  • 2 lb. ground meat
  • 2 Tbsp. chili powder
  • dash of garlic powder
  • 6 corn tortillas
  • 1 lb. Monterey Jack cheese
  • 1 c. grated Cheddar cheese
  • 1 onion, chopped
  • dash of cumin
  • salt and pepper to taste
  • 1 medium-size can Ranch Style beans
  • 1 can Ro-Tel tomatoes
  • 1 can cream of chicken or mushroom soup

Instructions

  1. Brown the ground meat with chopped onion, chili powder, cumin, garlic powder, salt, and pepper.
  2. Drain the excess fat from the meat mixture.
  3. Layer in an extra large Pyrex baking dish: first, half of the meat mixture.
  4. Next, place all 6 corn tortillas over the meat layer.
  5. Then, add the remaining half of the meat mixture mixed with the canned Ranch Style beans.
  6. Sprinkle Monterey Jack cheese over the meat and beans layer.
  7. Spread Ro-Tel tomatoes evenly over the cheese layer.
  8. Sprinkle grated Cheddar cheese on top of the tomatoes.
  9. Finally, spread the cream of chicken or mushroom soup over the cheese layer.
  10. Cover the dish and refrigerate for 24 hours.
  11. Uncover the casserole and bake at 350°F (175°C) for 1 hour.
