Malfatti are tender spinach and ricotta gnocchi-like dumplings full of fresh flavors, perfect for a comforting meal paired with rich meat sauce, suitable for family dinners or special occasions.

Ingredients

  • 1 cup chopped well drained spinach
  • 1 1/2 cups Ricotta cheese
  • 1 cup fine bread crumbs
  • 2 eggs
  • 1/2 cup grated Parmesan or Romano cheese
  • 1/4 cup minced green onion
  • 1 teaspoon sweet basil
  • 1/4 teaspoon nutmeg
  • 1 crushed clove garlic
  • flour
  • meat sauce

Instructions

  1. Mix chopped spinach, ricotta cheese, bread crumbs, beaten eggs, grated Parmesan or Romano, minced green onion, basil, nutmeg, and crushed garlic together.
  2. Roll the mixture into finger-shaped pieces and coat them in flour.
  3. Place the shaped fingers on a cookie sheet and chill until very cold.
  4. Bring several inches of water to a rolling boil in a skillet.
  5. Carefully place the chilled fingers into the boiling water and cook until they float to the top.
  6. Remove the cooked malfatti from the water with a slotted spoon.
  7. Serve them hot, covered with meat sauce.
