Mama'S Enchiladas are hearty, cheesy baked tortillas filled with seasoned ground beef and flavorful chili sauces, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 2 lb ground beef
  • 2 tsp chili powder
  • salt to taste
  • pepper to taste
  • 1 small can chopped green chilies
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 (10 oz) can enchilada sauce
  • 12 flour tortillas (7 to 8-inch)

Instructions

  1. Butter a 9 x 12 x 2-inch casserole dish.
  2. Preheat oven to 350°F.
  3. Fry ground beef in a skillet until browned, stirring with a fork to keep it pebbly.
  4. Drain excess fat from the beef.
  5. Add chili powder, salt, pepper, and chopped green chilies to the beef. Mix well.
  6. Combine cream of chicken soup, cream of mushroom soup, and enchilada sauce in a saucepan.
  7. Heat over medium heat, stirring until well blended.
  8. Add 1 1/2 cups of the soup mixture to the cooked beef and stir.
  9. Warm the tortillas slightly to make them pliable.
  10. Spread a thin layer of the remaining soup mixture in the prepared casserole.
  11. Place tortillas on a flat surface, spoon some of the beef mixture onto each, sprinkle with grated cheese, then roll up.
  12. Arrange rolled tortillas seam side down in the casserole dish.
  13. Pour remaining soup mixture over the rolled tortillas.
  14. Sprinkle the remaining grated cheese evenly over the top.
  15. Bake in the preheated oven for about 20-25 minutes until bubbly and cheese is melted.
