Ingredients

  • 5 large eggs
  • 1/2 lb butter
  • 1 cup sugar
  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 lb cherries
  • 1 lb glazed pineapple
  • 4 cups chopped pecans
  • 1/2 oz vanilla extract
  • 1/2 oz lemon extract

Instructions

  1. Cream butter and sugar until fluffy.
  2. Add well beaten eggs and blend well.
  3. Chop nuts and mix in part of flour.
  4. Sift remaining flour and baking powder; fold into egg butter mixture.
  5. Add vanilla and lemon flavorings; mix well.
  6. Add cherries, glazed pineapple, and chopped pecans.
  7. Mix by hand until well combined.
  8. Pour batter into a greased tube pan.
  9. Place in a cold oven.
  10. Bake for 3 hours at 275°F.
  11. If using small pans, reduce baking time accordingly.
  12. Doubles well for larger quantities.
