Ingredients

  • 1 fryer chicken
  • 1 cup canned whole tomato
  • 1/2 cup cider vinegar
  • 1/2 cup chopped onion
  • salt to taste
  • 1/2 cup crushed pineapple
  • 1 to 1 1/2 cups sugar
  • 1 slice fresh ginger
  • 1 tablespoon soy sauce
  • 1/2 cup chopped green pepper

Instructions

  1. Prepare the chicken by removing the bones and steaming good-sized pieces, preferably breasts and thighs.
  2. Dip the chicken pieces in tempura batter and deep fry in hot oil until golden and crispy.
  3. Slice each fried chicken piece into 1/2-inch to 1-inch slices.
  4. Arrange the sliced chicken on a bed of shredded lettuce.
  5. Pour the prepared sauce over the chicken and lettuce, and serve.
