Mandarin Shrimp

- Heat oil in a frying pan and sauté the shrimp for about 3 minutes until pink.
- Remove the shrimp from the pan and set aside.
- Add garlic to the pan and sauté for 1-2 minutes.
- Add sliced mushrooms and sauté for 2 minutes longer.
- Add water chestnuts, chicken bouillon cube, 1 cup water, and ground ginger.
- Simmer the mixture for 10 minutes.
- In a small bowl, make a paste of cornstarch and 1/2 cup water, then add soy sauce.
- Pour the cornstarch mixture into the pan and cook until the sauce thickens.
- Return the cooked shrimp to the pan and heat through.
- Serve over cooked rice and sprinkle with chopped green onions.
