  • 1 Tbsp. catsup
  • 2 c. clams, chopped fine (with liquid)
  • 1/4 tsp. dried thyme
  • 1/8 tsp. cayenne pepper
  • 1 tsp. parsley, minced

Instructions

  1. Melt butter and slowly fry the bacon in a Dutch oven until golden.
  2. Remove and save the bacon. Add the onion, celery, bell pepper, and garlic.
  3. Sauté until the onion is transparent.
  4. Add potatoes, bay leaf, and boiling water.
  5. Simmer for 10 minutes.
  6. Add tomatoes and catsup. Simmer until potatoes are soft.
  7. Add clams, thyme, cayenne pepper, parsley, and bacon. Simmer for 3 minutes.
  8. Remove the bay leaf, adjust seasoning, and serve.
