Ingredients

  • 1 lb. ground pork
  • 1 lb. ground hamburger
  • 2 cups soft bread crumbs
  • 2 eggs
  • 1/2 cup chopped onion
  • 2 tablespoons chopped parsley
  • 2 teaspoons salt
  • 2 tablespoons margarine
  • 10 or 12 oz. jar apricot preserves
  • 1/2 cup barbecue sauce

Instructions

  1. Combine ground pork, ground hamburger, bread crumbs, eggs, chopped onion, chopped parsley, and salt; mix lightly.
  2. Shape the mixture into medium-sized meatballs.
  3. Brown the meatballs in margarine in a skillet.
  4. Place the browned meatballs into a casserole dish.
  5. Combine apricot preserves and barbecue sauce in a bowl.
  6. Pour the sauce mixture over the meatballs in the casserole.
  7. Cover the dish with a lid or aluminum foil.
  8. Bake at 350°F (175°C) for 1 hour until cooked through and heated.
