Ingredients

  • 1 lb. dried lima beans
  • 8 c. water
  • 1 c. chopped onion
  • 4 slices bacon
  • 1/2 c. maple syrup
  • 1/2 c. ketchup
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. dry mustard
  • 1 bay leaf

Instructions

  1. Wash and soak the lima beans in water overnight.
  2. Drain the soaked beans and combine with 8 cups of water in a large baking dish.
  3. Add chopped onion, diced bacon, maple syrup, ketchup, Worcestershire sauce, salt, pepper, dry mustard, and bay leaf to the beans.
  4. Bake uncovered at 350°F (175°C) for at least 1 1/2 hours until beans are tender, stirring occasionally.
