Ingredients

  • 10 1/2 oz. can red kidney beans
  • 10 1/2 oz. can cannellini beans
  • 1 medium green pepper
  • 1 medium red onion
  • 1/3 cup carrot slices
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 2 Tbsp. grated Parmesan cheese
  • 3/4 tsp. Italian seasoning
  • 1/4 tsp. sugar

Instructions

  1. Cut the green pepper into thin strips.
  2. Slice the red onion into small rings.
  3. Drain the red kidney beans and cannellini beans.
  4. In a large bowl, combine the drained beans and prepared vegetables.
  5. In a small bowl, whisk together olive oil, red wine vinegar, balsamic vinegar, grated Parmesan cheese, Italian seasoning, and sugar.
  6. Pour the dressing over the bean mixture and toss gently to combine.
  7. Add additional balsamic vinegar to taste, if desired.
  8. Refrigerate for at least several hours or overnight before serving.
