Ingredients

  • 1/4 c. vegetable oil
  • 1/2 c. onions, thinly sliced
  • 1/2 c. carrots, thinly sliced
  • 1 clove garlic, peeled and crushed
  • 2 3/4 c. red wine (dry)
  • 1/2 tsp. bay leaves, crushed
  • 1/2 Tbsp. black pepper
  • 3 lb. lean beef (1-inch cubes), fat trimmed
  • 1/4 c. flour
  • 1 c. beef stock

Instructions

  1. Combine vegetable oil, sliced onions, sliced carrots, crushed garlic, red wine, crushed bay leaves, and black pepper to form the marinade.
  2. Place the beef cubes in a stainless steel bowl and pour half of the marinade over the beef.
  3. Cover and refrigerate for 24 hours, turning the meat once during marination.
  4. Save the remaining marinade in the refrigerator for future use or additional flavor.
