Ingredients

  • 1 lb. large unpeeled fresh shrimp
  • 1 (15 oz.) can pineapple chunks (undrained)
  • 1 (8 oz.) bottle Italian salad dressing
  • 1 (8 oz.) can tomato sauce
  • 1 Tbsp. brown sugar
  • 1 tsp. prepared mustard
  • 1 medium-size green pepper, cut into 1-inch cubes

Instructions

  1. Peel and devein the shrimp; set aside.
  2. Drain the pineapple chunks, reserving 1/4 cup of juice.
  3. In a bowl, combine Italian salad dressing, tomato sauce, brown sugar, and prepared mustard to make the marinade.
  4. Add the shrimp to the marinade, cover, and refrigerate for at least 30 minutes.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated shrimp, pineapple chunks, and green pepper cubes onto skewers alternately.
  7. Grill the skewers for 2-3 minutes per side until the shrimp are opaque and cooked through.
  8. Serve hot over hot cooked rice.
