Ingredients

  • 1 cup all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 2 eggs, separated
  • 3/4 cup milk
  • 1 tablespoon vegetable oil
  • 2 cups crawfish tails, coarsely chopped
  • 3 cups cooked rice
  • 1/4 cup minced pepper
  • Tabasco sauce

Instructions

  1. Sift together all-purpose flour, baking powder, salt, black pepper, and onion powder.
  2. Beat egg yolks, milk, and vegetable oil until well blended.
  3. Add the wet mixture to the dry ingredients and beat until combined.
  4. Stir in chopped crawfish tails, cooked rice, and minced pepper.
  5. Beat egg whites until stiff peaks form, but not dry, then fold into the batter.
  6. Add Tabasco sauce to taste and mix gently.
  7. Drop batter by tablespoonfuls into deep, hot oil (375°F).
  8. Fry until golden brown, about 3 to 4 minutes, turning once.
  9. Drain on paper towels and serve with cocktail sauce or tartar sauce.
