Marinated Vegetable Snack

Ingredients
- 2 carrots, cut into sticks ⓘ
- 1 cup broccoli buds ⓘ
- 1 cup cauliflowerets
- 1 medium cucumber, sliced ⓘ
- 1 medium zucchini, cut into sticks ⓘ
- 1 small onion, sliced and separated into rings ⓘ
- 1/2 cup cooking oil
- 3 tablespoons white wine vinegar ⓘ
- 1 teaspoon dried oregano, crushed
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon pepper ⓘ
Instructions
- In a saucepan, simmer carrots, covered, in a small amount of water for 2 minutes.
- Add broccoli and cauliflower; bring to a boil.
- Reduce heat; simmer for 3 minutes more.
- Drain the vegetables.
- Combine all vegetables in a bowl.
- In a small bowl, mix cooking oil, vinegar, oregano, salt, and pepper.
- Pour the dressing over the vegetables.
- Cover and chill for at least 8 hours, stirring occasionally before serving.
