  • pepper to taste

Instructions

  1. Wash and trim potatoes, carrots, parsnips, sweet potatoes, and turnips without peeling.
  2. Cut vegetables into 1/2-inch pieces.
  3. Add vegetables to boiling water and cover.
  4. Cook for 7 minutes, then drain and set aside loosely covered with foil.
  5. Slice the onion and shallots.
  6. Melt margarine in a skillet over medium heat.
  7. Add sliced onions and shallots to the skillet and sauté for 2 minutes.
  8. Add the drained vegetables to the skillet along with olive oil, sugar, and salt.
  9. Cook for 10 to 15 minutes, stirring frequently, until vegetables are browned and tender.
  10. Season with pepper to taste.
  11. Sprinkle chopped parsley on top before serving.
