A hearty meatloaf packed with vegetables, mushrooms, olives, and cheese, baked to perfection with a flavorful glaze—ideal for family dinners or casual gatherings.

Ingredients

  • 2 lb. ground beef
  • 1 large onion, chopped
  • 1/2 green pepper, chopped
  • 2 c. corn flakes
  • 1 (4 oz.) can mushrooms, drained
  • 2 eggs
  • 7 olives, halved
  • 2 slices Velveeta cheese, cut into small pieces
  • salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix all ingredients together in a large bowl until well combined.
  3. Pat the meat mixture firmly and flat in a large casserole dish, pushing the edges slightly away from the sides to allow grease to escape.
  4. Spread ketchup or barbecue sauce on top of the meatloaf.
  5. Bake covered for 1 hour and 30 minutes.
  6. Uncover and bake for an additional 15 minutes until browned and cooked through.
