Ingredients

  • 2 lb. ground beef
  • 4 medium onions, chopped fine
  • small amount oil
  • 1 stalk celery, chopped
  • 1 package large egg noodles
  • 2 cans English peas
  • 46 oz. can tomato juice
  • 1 cup tomato juice (reserved)
  • 1 lb. cheese, grated
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 1 Tbsp. chili powder

Instructions

  1. Cook the ground beef in a skillet until browned.
  2. Add chopped onions and cook until translucent.
  3. Chop in the chopped celery and cook for a few more minutes.
  4. Cook the egg noodles in boiling water until tender, then drain.
  5. Mix the grated cheese with 1 cup of tomato juice and season with salt, pepper, chili powder, and red pepper.
  6. Combine the cooked beef, onions, celery, noodles, peas, and the cheese mixture in a large dish.
  7. Pour the remaining tomato juice over the mixture and stir well.
  8. Put the dish in the oven and bake at 350°F for 30 minutes.
  9. Remove from oven, sprinkle cheese on top, and bake for an additional 30 minutes until cheese is melted and bubbly.
