Ingredients

  • 5 lb. ground beef
  • 5 eggs
  • 1 small can V-8 juice
  • 2 pkg. Lipton onion soup mix
  • 2 c. quick oatmeal
  • 2 Tbsp. Worcestershire sauce

Instructions

  1. In a blender, place eggs, V-8 juice, Worcestershire sauce, and onion soup mix. Blend until smooth.
  2. Add the blended mixture to the ground beef and mix well.
  3. Stir in the quick oatmeal and mix again until combined.
  4. Line the bottom of the pan with 3 to 4 strips of bacon. Form the meat mixture into a loaf shape and place it in the pan.
  5. Cover the top of the loaf with the remaining bacon strips.
  6. Bake in a 350°F (175°C) oven for 1 hour and 15 minutes, or longer if the bacon is not browned.
  7. Let stand for 5 to 10 minutes before serving.
