Ingredients

  • 1 1/2 lb. ground beef
  • 1 slightly beaten egg
  • 1 c. soft bread crumbs
  • 1/4 c. milk
  • 2 Tbsp. dry onion soup mix
  • dash of pepper
  • 2 Tbsp. salad oil
  • 1 (1 lb.) can tomatoes
  • 1 c. boiling water
  • 1 beef bouillon cube
  • 1/4 c. cold water
  • 2 Tbsp. cornstarch
  • 1 1/2 c. sliced carrots
  • 2 medium onions quartered

Instructions

  1. Combine ground beef, bread crumbs, milk, onion soup mix, and pepper in a bowl.
  2. Shape the mixture into meatballs.
  3. Brown the meatballs in hot salad oil in a large skillet.
  4. Remove the meatballs from the skillet and drain off excess fat.
  5. Add canned tomatoes to the skillet.
  6. Dissolve the beef bouillon cube in boiling water.
  7. Add cold water and cornstarch to the mixture and stir until it thickens.
  8. Return the meatballs to the skillet along with sliced carrots and quartered onions.
  9. Cover and simmer slowly until vegetables are tender, or transfer to a 2-quart casserole.
  10. Cover and bake at 350°F for 1 hour.
