A hearty mashed potato casserole with leeks, prosciutto, spinach, and Parmesan, baked to perfection with a cheesy topping—ideal for family dinners or special occasions.

Ingredients

  • 8 potatoes
  • 1 stick butter
  • 2 cups minced leeks
  • 2 cups minced prosciutto or ham
  • 2 packages drained, chopped frozen spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 stick butter
  • 1/2 cup sour cream
  • 3/4 cup hot milk

Instructions

  1. Bake the potatoes until tender. Remove pulp and reserve in a bowl.
  2. Saute the minced leeks and prosciutto in 1 stick of butter for 5 minutes.
  3. Add the chopped frozen spinach and grated Parmesan cheese to the leeks and prosciutto mixture.
  4. Mash the cooked potatoes with 1/2 stick of butter, sour cream, and hot milk.
  5. Add the leeks mixture to the mashed potatoes, then season with salt and pepper.
  6. Transfer the mixture to a buttered casserole dish, cover, and bake for 30 minutes.
  7. Uncover and bake for an additional 30 minutes. Top with Jarlsburg cheese before serving.
