Ingredients

  • 1 cup mashed potatoes
  • 2 eggs, beaten
  • 2/3 cup oil
  • 1 package yeast
  • 5 to 6 cups flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 cup scalded milk
  • 1/2 cup warm water

Instructions

  1. Dissolve yeast in warm water and set aside.
  2. Combine mashed potatoes, beaten eggs, oil, sugar, and salt in a large bowl.
  3. When the mixture is lukewarm, add the dissolved yeast and water.
  4. Stir with a large spoon and gradually add enough flour to make a firm, not stiff, dough.
  5. Place the dough in a greased bowl and lightly grease the top with oil.
  6. Cover the bowl and refrigerate if not baking immediately; use within 4 days.
  7. When ready to bake, shape the dough and let it rise in a warm place for 1½ hours or until doubled in size.
  8. Bake at 400°F (200°C) for 8 to 10 minutes until golden brown.
