Ingredients

  • 1 egg
  • 1/2 cup molasses
  • 1/3 cup sugar
  • 3 tablespoons butter or margarine, melted
  • 1 1/2 teaspoons grated lemon rind
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk
  • 1/2 cup chopped pecans

Instructions

  1. Combine egg, molasses, sugar, melted butter or margarine, grated lemon rind, and lemon juice in a large mixing bowl, beating well.
  2. Combine flour, baking powder, baking soda, and salt; add to egg mixture alternately with buttermilk, beginning and ending with flour mixture.
  3. Mix well after each addition.
  4. Stir in chopped pecans.
  5. Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan.
  6. Bake at 350°F for 50 to 55 minutes or until a wooden pick inserted in center comes out clean.
  7. Cool in the pan for 10 minutes; remove loaf from pan and let cool completely.
