Ingredients

  • 1 1/4 cups boiling water
  • 1 cup quick oatmeal
  • 1 stick oleo
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • 1 teaspoon soda
  • 1 teaspoon vanilla
  • 1 cup pecans
  • 1 cup coconut (optional)

Instructions

  1. Mix together boiling water, quick oatmeal, and oleo; let stand.
  2. Mix sugar, brown sugar, and eggs.
  3. Add flour, cinnamon, soda, vanilla, nutmeg, pecans, and coconut.
  4. Spread the batter into a 9 x 13-inch pan.
  5. Bake at 350°F for 35 minutes.
