  • 3/4 c. oatmeal
  • 3/4 c. milk
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • catsup
  • water
  • chili powder
  • 1 onion

Instructions

  1. Mix all ingredients together thoroughly, including hamburger meat, cracker crumbs, mustard, Worcestershire sauce, eggs, oatmeal, milk, salt, pepper, chopped onion, chili powder, and catsup.
  2. Place the mixture in a buttered pan and bake at 350°F (175°C) for 45 minutes.
  3. About 20 minutes before the end of cooking, add sliced tomatoes on top of the meat loaf.

Tips & Substitutions

For added moisture, consider substituting half of the hamburger meat with ground turkey or chicken. If you don't have cracker crumbs, crushed bread or even oats can work well. To enhance flavor, sauté the onion before adding it to the mixture. If you like a kick, add more chili powder or even some hot sauce.

Serving Suggestions

Serve the meat loaf with classic sides like mashed potatoes or green beans for a comforting meal. A fresh salad or roasted vegetables can add a nice balance. For a twist, pair it with Jean'S Baked Beans to complement the flavors. Don't forget to provide extra catsup on the side for dipping!

Storage & Reheating

Leftover meat loaf can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, slice the meat loaf and microwave on medium power until warmed through, or place in a preheated oven at 350°F (175°C) for about 15 minutes, covered with foil to retain moisture.
