Ingredients

  • 2 Tbsp fat
  • 2 medium onions, thinly sliced
  • 6 slices bread
  • 1 cup milk
  • 2 eggs, unbeaten
  • 1/2 cup finely chopped green pepper
  • 1 teaspoon seasoned salt
  • 1 pound ground beef
  • 9 thin onion slices

Instructions

  1. Melt fat in skillet; add sliced onions and sauté until golden brown.
  2. Crumble bread into a mixing bowl; add milk and let stand until bread is moist.
  3. Add unbeaten eggs to the bread mixture and mix well.
  4. Stir in sautéed onions, chopped green pepper, seasoned salt, and ground beef; mix thoroughly.
  5. Pile the mixture lightly into greased 2 1/2-inch muffin pans.
  6. Top each with a thin onion slice.
  7. Bake in a hot oven (425°F) until nicely browned, about 30 minutes.
