Ingredients

  • 2 c. cornflakes cereal
  • 1 egg
  • 1 (10 1/2 oz.) can beef broth
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. ground beef
  • 2 Tbsp. vegetable oil
  • 1 (10 3/4 oz.) can tomato soup
  • 1/2 c. water
  • 1/4 tsp. thyme
  • 2 c. frozen sliced carrots
  • 1 medium onion
  • 1 can whole white potatoes
  • dried parsley flakes

Instructions

  1. In a large bowl, combine cornflakes, egg, salt, pepper, and ground beef. Mix well and form into meatballs.
  2. In a skillet, heat vegetable oil over medium heat. Brown meatballs on all sides.
  3. In a large pot, combine beef broth, tomato soup, water, and thyme. Bring to a boil.
  4. Add meatballs, carrots, onion, and potatoes to the pot. Reduce heat and simmer for about 30 minutes, or until vegetables are tender.
  5. Serve hot, garnished with dried parsley flakes.
