Ingredients

  • 2 lb. fresh zucchini squash
  • 2 c. soft bread crumbs
  • 3/4 c. shredded Cheddar cheese
  • 1 egg
  • 1/4 c. grated onion
  • 1/4 c. minced parsley
  • 1 c. spaghetti sauce
  • salt and pepper

Instructions

  1. Clean the zucchini, peel lightly, and cut off the stems.
  2. Cut the zucchini into 3-inch lengths.
  3. Run an apple corer through the center lengthwise and remove the core.
  4. Chop the zucchini centers very fine and combine with bread crumbs, shredded Cheddar cheese, beaten egg, grated onion, minced parsley, salt, and pepper.
  5. Mix well and pack the stuffing into the hollowed zucchini pieces.
  6. Roll any remaining stuffing into small balls.
  7. Place the stuffed zucchini and the balls in a baking dish, pour spaghetti sauce over all, and cover.
  8. Bake at 400°F for 1 hour.
  9. Uncover and bake for an additional 30 minutes.
