Ingredients

  • 1 1/4 cups flour
  • 1 egg
  • 1 1/2 cups diced zucchini (unpeeled)
  • 1/2 cup oil
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 tablespoon salt

Instructions

  1. Combine egg, oil, sugar, vanilla extract, and cinnamon in a large bowl. Stir in diced zucchini.
  2. In another bowl, mix together flour, baking soda, and salt.
  3. Add the wet mixture to the dry ingredients and stir until all ingredients are moist.
  4. Pour the batter into a greased loaf pan.
  5. Bake in a preheated 350°F oven for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Let cool on a wire rack before removing from the pan.
