Ingredients

  • 1 c. Quaker Masa Harina
  • 1 c. all-purpose flour
  • 1 pkg. taco seasoning mix
  • 4 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 egg
  • 1/4 c. vegetable oil
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 c. shredded sharp Cheddar cheese

Instructions

  1. Combine the dry ingredients: Quaker Masa Harina, all-purpose flour, taco seasoning mix, baking powder, sugar, and salt.
  2. Add the dry mixture to the combined milk, egg, and vegetable oil. Mix just until the dry mixture is moistened.
  3. Stir in the drained whole kernel corn and shredded Cheddar cheese.
  4. Pour the batter into a greased 9-inch square baking pan.
  5. Bake in a preheated 425°F oven for about 30 minutes, or until golden and cooked through.
