Ingredients

  • 1 lb ground meat
  • 1 small onion, chopped
  • 1 (8 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 3 cans water (6 oz each)
  • 1 (10 oz) can tomatoes and green chilies
  • 1 tsp chili powder
  • 1 tsp powdered oregano
  • 1 tsp cumin
  • 1 tsp salt
  • 2 tsp sugar
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 (6 oz) package corn chips
  • 1 cup diced, peeled avocado
  • 1 cup diced, fresh tomato
  • 1 cup shredded Cheddar cheese
  • 1 cup chopped green onion
  • 1 cup chopped ripe olives

Instructions

  1. Crumble beef into a heated skillet.
  2. Cook until the meat loses its color, adding chopped onion during the last few minutes of cooking.
  3. Drain excess grease from the skillet.
  4. Add tomato sauce, tomato paste, water, tomatoes and green chilies, chili powder, oregano, cumin, salt, sugar, and minced garlic to the skillet. Simmer to blend flavors.
  5. Stir in cooked rice and heat through.
  6. Serve topped with diced avocado, chopped fresh tomato, shredded Cheddar cheese, chopped green onion, and chopped ripe olives.
  7. Serve with corn chips on the side.
