Ingredients

  • 1 chicken, boiled
  • 1 (10 oz.) can enchilada sauce
  • 1 (10 oz.) can cream of mushroom soup, undiluted
  • 1 large onion, chopped
  • 1/2 tsp. garlic salt
  • dash of pepper
  • 1 bag (8 1/2 oz.) regular size corn chips
  • 1 cup shredded Cheddar cheese
  • 1 to 2 cups chicken broth

Instructions

  1. Take chicken off bones and cut into bite-sized pieces.
  2. Combine enchilada sauce, cream of mushroom soup, sautéed onion, garlic salt, pepper, and chicken.
  3. In a 12 x 7 x 2-inch pan, layer half the corn chips, the chicken mixture, then remaining chips.
  4. Sprinkle shredded Cheddar cheese over the chips.
  5. Pour chicken broth over the layered mixture.
  6. Bake at 350°F (175°C) until the cheese melts and the top is bubbly.
