Mexican Cornbread I

Ingredients

  • 2 c. self-rising meal
  • 1 c. self-rising flour
  • 2 Tbsp. sugar
  • 3 eggs
  • 1/2 c. oil
  • 1 2/3 c. sweet milk
  • 1 can cream-style corn
  • 8 hot peppers, chopped (jalapeno)
  • 1 large onion, chopped
  • 2 c. Colby or Cheddar cheese, grated
  • 1/2 lb. Jimmy Dean hot sausage

Instructions

  1. Mix the first 6 ingredients well. Fry sausage and crumble; drain very well. Mix all ingredients. Pour into a hot, oiled black iron skillet. Place in a 400° oven and bake until golden brown.
