Ingredients

  • 1 cup white flour
  • 1 cup yellow cornmeal
  • 1 cup whole canned corn
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons honey
  • 1 cup milk
  • 1/4 cup oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup minced onion
  • 1/2 cup chopped green chilis or jalapenos
  • 1 egg

Instructions

  1. Saute onion and green chilis in oil until softened.
  2. Add the sautéed onion and chilis to the dry ingredients and mix well.
  3. In a separate bowl, beat the egg and honey together.
  4. Combine the egg mixture with the dry ingredients mixture and stir until just combined.
  5. Pour batter into a greased baking dish.
  6. Bake at 375°F (190°C) for 30 minutes or until golden brown.
