A flavorful Mexican-inspired egg dish with turkey, tomatoes, peppers, and melted cheese, perfect for breakfast or brunch for those craving bold, hearty flavors.

Ingredients

  • 3 corn tortillas
  • 3 Tbsp. liquid Butter Buds
  • 1/2 c. diced onion
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1 c. shredded white turkey meat
  • 1/2 c. green pepper strips
  • 6 Egg Beaters
  • 1 c. shredded nonfat mozzarella cheese

Instructions

  1. In a large skillet, cook the corn tortillas in the liquid Butter Buds until golden.
  2. Remove and set aside.
  3. Add diced onion to the skillet and cook until tender.
  4. Drain the stewed tomatoes and reserve the liquid.
  5. Add the reserved tomato liquid to the skillet; cover and heat on high for 3 minutes, stirring occasionally.
  6. Stir in the drained tomatoes, cooked turkey, and green pepper strips; heat through.
  7. Reduce heat to low; add the cooked tortillas and beaten Egg Beaters.
  8. Cover and cook for 4 to 6 minutes or until Egg Beaters are set.
  9. Sprinkle with shredded cheese; cover and heat for one minute or until cheese is melted.
  10. Serve immediately.
