Mexican Enchiladas

Mexican Enchiladas are flavorful rolled tortillas filled with cheese and seasoned with a rich tomato and chili sauce. This comforting dish offers a perfect blend of spicy, cheesy, and savory flavors, making it an ideal choice for family dinners or casual gatherings with friends.

Ingredients

  • 2 Tbsp. minced onion
  • 2 Tbsp. margarine
  • 1 Tbsp. flour
  • 1 (1 lb. 4 oz.) can tomatoes, drained
  • 1 clove garlic, minced
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. Tabasco
  • 2 c. grated Cheddar cheese

Instructions

  1. Dip tortillas into enchilada sauce.
  2. Place a large spoonful of filling on each tortilla and roll up.
  3. Arrange the rolled tortillas in an 11 1/2 x 7 1/2 x 1 1/2-inch baking dish.
  4. Cover with more enchilada sauce and sprinkle with remaining filling.
  5. Bake at 375°F until heated through and cheese is bubbly, about 20 minutes.
  6. Serve hot to 6 Mexicans.
