Ingredients

  • 1/2 lb. ground beef
  • 1 cup refried beans
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 8 manicotti shells
  • 8 oz. taco or picante sauce
  • 1 1/4 cups water
  • 8 oz. sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup olives
  • 1/2 cup Monterey Jack cheese
  • 1 diced tomato

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat.
  3. Mix the cooked beef with refried beans, oregano, and cumin.
  4. Fill uncooked manicotti shells with the beef and bean mixture.
  5. Arrange the filled shells in a 9 x 13-inch baking pan.
  6. Combine taco or picante sauce with water and pour over the shells.
  7. Bake uncovered for 20 minutes.
  8. Turn the shells over carefully and bake for an additional 25 minutes.
  9. Mix sour cream, chopped green onions, and Monterey Jack cheese.
  10. Spread the sour cream mixture over the shells and bake for 5 minutes.
  11. Sprinkle diced tomatoes on top before serving.
