Ingredients

  • 16 oz. dried peas
  • 28 oz. canned whole tomatoes
  • 2 Tbsp. sugar
  • 2 tsp. garlic salt
  • 2 1/2 Tbsp. chopped celery
  • 2 lb. sausage
  • 1 medium onion
  • 1/2 cup water
  • 2 1/2 Tbsp. chili powder
  • 1/4 tsp. pepper

Instructions

  1. Wash the dried peas and soak them in water 2 inches above the peas overnight.
  2. Brown the sausage until crumbled in a skillet.
  3. Add chopped onion to the sausage and cook until tender.
  4. Drain the sausage and onion mixture.
  5. Drain the soaked peas.
  6. Stir the drained peas, sausage mixture, and remaining ingredients into a pot.
  7. Bring to a boil.
  8. Cover and simmer for 1 1/2 hours, adding water if needed.
