Ingredients

  • 1 lb ground beef
  • 1 (17 oz) can whole kernel corn, drained
  • 1 (15 oz) can tomato sauce
  • 1 cup Pace picante sauce
  • 1 tablespoon chili powder
  • 1 1/2 teaspoon ground cumin
  • 1 (16 oz) carton cottage cheese
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon oregano leaves, crushed
  • 1/2 teaspoon garlic salt
  • 12 corn tortillas
  • 1 cup shredded Cheddar cheese

Instructions

  1. Combine ground beef, drained corn, tomato sauce, picante sauce, chili powder, and ground cumin in a large skillet. Simmer for 5 minutes, stirring frequently.
  2. In a separate bowl, mix cottage cheese, eggs, grated Parmesan cheese, crushed oregano leaves, and garlic salt until well combined.
  3. Arrange 6 tortillas on the bottom and sides of a lightly greased 13 x 9 x 2-inch baking dish, overlapping as necessary.
  4. Spread half of the meat mixture over the tortillas.
  5. Bake in a preheated 375°F (190°C) oven for about 30 minutes or until hot and bubbly.
  6. Remove from oven and sprinkle with shredded Cheddar cheese.
  7. Let stand for 10 minutes before serving.
