Mexicorn Lasagne

Ingredients
- 1 lb ground beef ⓘ
- 1 (17 oz) can whole kernel corn, drained ⓘ
- 1 (15 oz) can tomato sauce
- 1 cup Pace picante sauce
- 1 tablespoon chili powder ⓘ
- 1 1/2 teaspoon ground cumin ⓘ
- 1 (16 oz) carton cottage cheese ⓘ
- 2 eggs ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1 teaspoon oregano leaves, crushed ⓘ
- 1/2 teaspoon garlic salt ⓘ
- 12 corn tortillas ⓘ
- 1 cup shredded Cheddar cheese ⓘ
Instructions
- Combine ground beef, drained corn, tomato sauce, picante sauce, chili powder, and ground cumin in a large skillet. Simmer for 5 minutes, stirring frequently.
- In a separate bowl, mix cottage cheese, eggs, grated Parmesan cheese, crushed oregano leaves, and garlic salt until well combined.
- Arrange 6 tortillas on the bottom and sides of a lightly greased 13 x 9 x 2-inch baking dish, overlapping as necessary.
- Spread half of the meat mixture over the tortillas.
- Bake in a preheated 375°F (190°C) oven for about 30 minutes or until hot and bubbly.
- Remove from oven and sprinkle with shredded Cheddar cheese.
- Let stand for 10 minutes before serving.
