Michelle'S Banana Oat Bread

Ingredients

  • 1 1/2 cups all purpose flour or whole wheat flour
  • 1/3 cup sugar
  • 1 1/2 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1 cup regular oats
  • 2 - 3 mashed ripe bananas
  • 1/2 cup low-fat milk
  • 2 t vanilla
  • 2 large eggs
  • Optional
  • walnuts
  • blueberries
  • raisins
  • chocolate chips
  • cinnamon

Instructions

  1. 1. Measure and mix dry ingredients first: flour, sugar, baking powder, baking soda, salt and oats
  2. 2. Measure and mix all wet ingredients in separate bowl: bananas, milk, vanilla, eggs
  3. 3. Slowly Add dry ingredients to wet ingredients and mix just intil combined
  4. 4. Mix in optional ingredients if desired
  5. 5. Bake for 55 minutes in 8X4 loaf pan; Bake 30 minutes for muffins
  6. 6. Cool for 15 minutes before removing from pan
