Ingredients

  • 1/2 lb. bacon
  • 4 medium onions
  • 2 lb. ground beef
  • 2 (20 oz.) cans kidney beans
  • 4 (8 oz.) cans tomato sauce
  • 3 cloves garlic
  • 2 to 3 Tbsp. chili powder
  • 1/2 tsp. cayenne
  • pepper (optional)

Instructions

  1. Cut bacon into small pieces and place in a large heavy pot.
  2. Chop onions and add to the bacon in the pot.
  3. Cook together until onions are soft, but not brown.
  4. Add ground beef and brown the meat.
  5. Drain off excess fat and return the meat to the pot.
  6. Add kidney beans, tomato sauce, minced garlic, chili powder, cayenne pepper, and pepper if desired.
  7. Cook slowly for 2 hours or more, adding water when needed and stirring occasionally.
